Our signature mead, made with cherries, sloe berries and honey. Each edition begins with a fruit wine as its base. During fermentation, we gradually add honey until we approach the original sugar content of the ripe fruit.
In this edition, we incorporated the unique character of the sloe berry. A small fruit known for its concentrated flavour and tannins, ripening only after the first frost. Its earthy and spicy notes build on the fruity character of the cherries, in harmony with honey. Perfect with pâté, or dark chocolate.
