Lambic'ado - 300cl
For this second edition of Lambic’ado, we journeyed to Jerez de la Frontera, in Andalusia, to visit the Fernández-Gao estate. On site, we personally selected barrels that had contained Palo Cortado (for 40 years), Oloroso, and Amontillado sherry, in which our gueuze aged for an additional season. Each of these barrels imparted its own personality to the lambic, enriching the blend with notes of sherry, a robust structure, and the warm patina of aged wood.
